Happy Saturday! For most people, today is just the Saturday before Halloween. For me it’s Georgia/Florida, THE biggest football gameday of the year! In college we would take buses down to Jacksonville, FL, and spend today tailgating and cheering on the DAWGS! I can’t be there this year, but I’m excited to go to Mortimers in Uptown Charlotte to watch the game! GO DAWGS!
Recently I was lucky enough to travel to St. Thomas in the US Virgin Islands and it was A-MA-ZING! We stayed at the Marriott there and the beach was absolutely gorgeous. The trip was the perfect way to relax and enjoy some nice weather before winter sets in. Here are a few pics from the trip!
Hi! So far I’m doing much better with blogging… twice in one week! This time I thought I would share one of my FAV recipes. It goes by many different names… Texas Caviar, Poor Man’s Caviar, Black Bean and Corn Dip, etc. Whatever you want it call it, it is quick and delicious!
1 can each: black eyed peas (drained), whole kernel corn (drained), black beans (drained and washed), diced tomatoes (drained), rotel tomatoes (drained)
4-6 chopped green onions
1/2 large green bell pepper, chopped
1/4 cup cilantro, chopped
Balsamic Vinaigrette dressing
All you do is mix together all the ingredients and add the salad dressing to taste. Serve with tortilla chips. ENJOY!
