The easiest, tastiest, healthiest dip you’ve ever had!

Hi!  So far I’m doing much better with blogging… twice in one week!  This time I thought I would share one of my FAV recipes.  It goes by many different names… Texas Caviar, Poor Man’s Caviar, Black Bean and Corn Dip, etc.  Whatever you want it call it, it is quick and delicious!

Ingredients:

1 can each: black eyed peas (drained), whole kernel corn (drained), black beans (drained and washed), diced tomatoes (drained), rotel tomatoes (drained)

4-6 chopped green onions

1/2 large green bell pepper, chopped

1/4 cup cilantro, chopped

Balsamic Vinaigrette dressing

 

All you do is mix together all the ingredients and add the salad dressing to taste.  Serve with tortilla chips.  ENJOY!
